Training on the Production of Homemade Preserves

The Technical Office of INTA Los Menucos provided professionals with training on the preparation of home-canned food.

An activity planned with teachers from the Escuela Rionegrina ESRN N° 82 of Sierra Colorada, Río Negro. Seven senior students and teachers from the area of productive micro-enterprises took part in this activity.
It is a very important initiative considering that they are young people from the locality in relation to the regional productive systems: horticulture and sheep and cattle raising, mainly, and they act as engines to encourage family projects.
In order to add value to the products and to adapt to the environment, the teachers proposed developing a micro-enterprise with local and regional products, which would allow analyzing the cost structure and then marketing them in the town of Sierra Colorada.
As a processing room, the kitchen of ESRN No. 82 was set up, respecting the food handling protocols in force, and two types of preserves were produced.
The theoretical part was carried out in the laboratory, where the building conditions, the clothing of the processing personnel and the procedure per se necessary for the production of preserves were discussed.
